I made this the other night and we enjoyed it for dinner.
Here is a list of ingredients:
2 pounds of ground meat, 2 cans of diced tomatoes with chiles (the name for this dish is from the name brand Rotel tomatoes. I use the store brand), 1/2 jar of sliced jalapenos, 1 full box of Velveeta cheese (I found a new white cheese “flavor” that’s really good).
Cook the ground meat with your favorite spices until browned. Drain really well. Return the meat to the pan. Add in two cans of diced tomatoes – do not drain liquid! Add in the jalapenos with some of the vinegar – use more or less if you like. Cube the Velveeta and add to the pot. Stir occasionally until the cheese is melted.
Enjoy with your favorite chips.
Note: I have added onions, mushrooms, and green onions to this dip. It’s very versatile and my husband likes leftovers on his scrambled eggs. ;)
